Skinny Head Pizza

Let’s talk Pizza. Pizza is one of my favorite foods. Unfortunately, it’s loaded with carbs and sugars and everything bad for your bod–complete opposite of Keto. For those who’ve been on the Keto diet a while, I’m sure you’ve heard of “Fat Head Pizza.” It’s basically pizza crust made with cheese, cream cheese and almond or coconut flour. I’ve made this pizza several times, and it’s come out decent. The only issue I’ve experienced is my crust never coming out quite as thick and crispy as I prefer. I decided to experiment with my crust to come up with a great low carb, low sugar alternative that comes out a bit more crispy than Fat Head Pizza. I give you: SKINNY HEAD PIZZA!

Crust:

1. 2 Cups Cooked Chicken, shredded (I cheated and used rotisserie chicken from Kroger, which is perfectly fine!)

2. 2 Eggs, beaten

3. 1 Cup Shredded Mozzarella

4. Season Salt, to taste

5. Garlic Powder, to taste

*Pre-heat oven to 400 degrees. Shred chicken in blender until almost grainy consistency. Mix together shredded chicken, eggs, Mozzarella, and seasonings. Place mix on parchment paper pizza sheet, and roll out to circular shape. It should look as follows:

Bake for 35 minutes. At the 17.5 minute point, you should flip crust over so both sides cook evenly. Once the 30 minutes is up, add your favorite cheeses and toppings, and cook for an additional 20 minutes. Pizza should come out perfect! The crust doesn’t even look like chicken once cooked 🙂
